Taste sensation and provenance

Our two-acre kitchen garden is a year-round labour of love, the place where we work our magic ensuring an abundant, fresh harvest of herbs, fruits and veggies. These homegrown ingredients feature in our dishes, delivering incredible flavours to tingle your taste buds. 

On the farm we raise Highland cattle, chickens, and Tamworth pigs to elevate our menus, and we proudly serve this exceptional meat in 1887 and Bo and Muc. Whether you're savouring a succulent sirloin, a juicy Highland burger or a hearty Tamworth pork plate, you can be sure of its provenance. It’s as local as it gets.

Immersive feast for the senses

You’re warmly invited to explore our garden, greenhouses and orchard, each brimming with fresh produce. We nurture an array of ingredients, from vines and tomatoes to pears and apples. Our flower borders produce vibrant beautiful blooms that often grace the hotel rooms.

Our gin garden, with a central star-shaped pond, showcases unique Wester Ross botanicals like Scots Lovage featuring in our Arcturus gin. Alex, our head chef, is inspired by the kitchen garden, crafting dishes from same-day harvested produce. Mouthwateringly good.

Highland heroes of flavour

Our hardy Highland cattle thrive in the rugged terrain. They're quite the local celebrities, often captured on camera when they’re munching on tasty leftover kitchen peelings. Well, we all deserve little treats!

The Tamworth pigs are real characters with their fiery coats and wild roots. Bred locally in Wester Ross we rear them for around 6 months, before they become delectable delights in our head chef Alex’s skilled hands.

Like any farm, we aim to provide the finest meat for your enjoyment. From field to fork, savour the best.

A delicious taster of what grows in our kitchen garden

Veggies for all occasions including (and not limited to) courgette, aubergine, cherry sweetie and yellow perfection tomatoes, portimarrton squash, celeriac, ambino and purple dragon Carrots and padron peppers.

The sweet tooth will relish fresh apples, pear, plum, strawberries, raspberries, red, white and black currants, gooseberries, quince and juniper. Raw, baked or pureed the taste is always sensational.

Botanicals like these are often the finishing touch to any dish, including rosemary, coriander, fennel, chive, thyme, basil, mint, lovage, sweet sicily, borage and scots lovage. 

Nature's treasures unfold in our flower and herb borders

Our herbaceous borders are home to: helenium, crocosmia, geum, bee & butterfly border of Verbena, eupatorium, hollhock, valerina, solidago, sedum and anthemis. 

Expect sensational colours and scents from our cut flower borders of astrantia, delpinium, alstroemeria, aquiegia, thalictrum, crocosmia, plox, alchemilla. 

Our gin garden is vibrant with primula florindae, veronicastrum, hyacinths, cammasia, tulips, alliums plus our botanicals for our own Arcturus gin.
